Aunt Betty’s Meatloaf

4 lbs. ground beef

4 eggs

2 reg. size cans French Onion soup

1 (8 oz.) pkg. Pepperidge Farm stuffing mix

1 tsp salt

Topping: 

1 cup ketchup

1 cup brown sugar

1/4 cup mustard (not dried)

1/8 cup vinegar

Mix all ingredients (except topping) and form into 2 loaves.  Place each loaf in a loaf pan (or both loaves side by side in 9X9).  Bake at 375 degrees for 1 hour.  Pour topping over loaf and bake an additional 10 minutes.

Topping:  Mix all 4 ingredients and pour over loaves.  Bake 10 minutes. 

Note:  freezes well, prior to adding topping. 

Each loaf feeds 8-10.
